boarding my plane I bought something to eat, a panini, that<br />
had this tasty little food common in the Mediterranean diet<br />
and, which has been found to have a quite interesting health<br />
benefit.</p>
<p>As I ate my panini with gusto, I thought you might enjoy<br />
learning about it so here is the story.</p>
<p>This food goes well with many things: salmon, chicken,<br />
omelettes, salads, etc. Itâ€™s salty, green, round and small.</p>
<p>Itâ€™s capers.</p>
<p>Well, it&#8217;s been discovered, recently, that the extract of capers<br />
can help prevent the formation of some by-products that<br />
result during the digestion of meats.</p>
<p>These by-products have been associated with an increased<br />
risk of heart disease and cancer.</p>
<p>Capers also are a wonderful source of antioxidants, and this<br />

big Portobello mushrooms, organic, 7 for 2 bucks (a good<br />
deal, I think), so I bought them and made a delicious<br />
recipe that I think you&#8217;ll love.. Even more when you learn<br />

<p>It only takes a few minutes to prepare this recipe,<br />
but you don&#8217;t have to tell others, who will be delighted<br />

<p>Studies have found that Portobello mushrooms are packed with<br />
a powerful antioxidant called ergothioneine. They have more<br />
of this antioxidant than their cousins, the bottom white.</p>
<p>Also, they are an excellent source of niacin, and a good<br />
source of potassium and selenium.</p>
<p>All these nutrients are beneficial to the body. For example,<br />
it&#8217;s been found that niacin plays a key role in lowering<br />
bad cholesterol levels, adequate potassium in your diet helps<br />
ease feelings of irritability, anxiety, and stress, and selenium<br />
has been shown to elevate mood and decrease anxiety.</p>
<p>Also, potassium is key to maintain those bothersome cramps<br />
at bay.</p>
<p>As you know very well, bananas are great sources of potassium<br />
but guess what, Portobello mushrooms have much more<br />
potassium than bananas and of course much less calories and<br />
carbohydrate content.</p>
<p>These mushroom also have protein that&#8217;s why some people use<br />
them in hamburgers instead of meat, although the amount<br />
of protein is not that much.</p>
<p>100 grams of Portobello mushrooms (two medium) have<br />
2.5 grams of protein.</p>
<p>Now to the recipe. Ah, but before let me tell you that these<br />
mushrooms store well in the refrigerator for about a week to<br />
10 days if you put them in a brown paper bag.</p>
<p>Recipe:</p>
<p>3 Portobello mushrooms, halved and sliced in small chunks<br />
2 Tbs extra virgin olive oil<br />
1 Tbs lemon juice<br />
1 tsp natural apple cider vinegar<br />
1 clove of garlic minced<br />
1 Tbs of fresh dill (or rosemary)<br />
1 tsp of tamari<br />
1/3 of water or vegetable stock (I use organic mushroom stock)<br />
Fresh ground pepper to taste</p>
<p>In a pyrex, mix the ingredients making sure that all mushrooms<br />
get coated. Then put in the oven and bake at 250 F for<br />
about 30 minutes. Mix once or twice while they are baking.</p>
