As you know I like to try new foods and experiment mixing
them up to see what I end up with. It’s lot of fun and
sometimes I find out that certain things mix really well
even though at first it sounded weird.
Yesterday afternoon I went to a big supermarket a few blocks
from home and before going to the cashier I strolled along
the natural food and organic section. There I found all kinds
of butters and one that I never had tried before. It was
green and yeah, I had to think twice before making up my
mind and putting it in the cart…
Since I have the habit of reading labels, when I read that it
had a high content of protein, much higher than the other
butters sitting there I thought why not.
In the cart I also had a whole tray of small and ripe black
figs and in a split of a second I imagined cutting a fig in half
and topping it with a bit of this butter. It sounded like a
good idea.
What was it… Pumpkin seed butter.
As soon as I got home I couldn’t wait and tried it with the fig
and must tell you, I loved it… what a delish, filling and healthy
snack it turned out to be.
And the best of all is that you don’t need to eat that much.
One or two figs, depending on their size is okay, and a
tablespoon of pumpkin seed butter is enough.
Pumpkin seeds have important nutrients for example magnesium,
iron, manganese, phosphorus and the often called intelligence
mineral, zinc. Zinc plays a key role in mental development and
helps metabolize energy among other things.
Another compound these seeds have is phytosterols, which are
compounds similar to cholesterol. They help lower blood levels
of bad cholesterol, boost the immune response and lower
the risk of contracting certain cancers.
The fat content found in pumpkin seeds is high but don’t panic.
It’s a healthy fat (don’t forget you need good fats in your diet
everyday). They even have some omega-3s.
Pumpkin seeds are good for men and women.
They promote prostate health, bone density, lower the bad
cholesterol, and combat inflammation.
They are a good food for the mind too thanks to the minerals
and tryptophan they contain, and since they are a good source
of protein they can be an ally in your weight loss and or
weight management efforts.
Figs + pumpkin seed butter = a wonderful mid-day snack that
will make you feel good and energized, curb your appetite,
balance your blood sugar (key for keeping a balanced mood
and burning fat), and promote overall health.
Too, you could try eating these seeds alone or sprinkled in
salads. Maybe you have…
Wishing you a healthy and happy long weekend,
Monica
