I was grocery shopping last night and saw this beautiful,
big Portobello mushrooms, organic, 7 for 2 bucks (a good
deal, I think), so I bought them and made a delicious
recipe that I think you’ll love.. Even more when you learn
about their health properties.
It only takes a few minutes to prepare this recipe,
but you don’t have to tell others, who will be delighted
with your gourmet talents
Studies have found that Portobello mushrooms are packed with
a powerful antioxidant called ergothioneine. They have more
of this antioxidant than their cousins, the bottom white.
Also, they are an excellent source of niacin, and a good
source of potassium and selenium.
All these nutrients are beneficial to the body. For example,
it’s been found that niacin plays a key role in lowering
bad cholesterol levels, adequate potassium in your diet helps
ease feelings of irritability, anxiety, and stress, and selenium
has been shown to elevate mood and decrease anxiety.
Also, potassium is key to maintain those bothersome cramps
at bay.
As you know very well, bananas are great sources of potassium
but guess what, Portobello mushrooms have much more
potassium than bananas and of course much less calories and
carbohydrate content.
These mushroom also have protein that’s why some people use
them in hamburgers instead of meat, although the amount
of protein is not that much.
100 grams of Portobello mushrooms (two medium) have
2.5 grams of protein.
Now to the recipe. Ah, but before let me tell you that these
mushrooms store well in the refrigerator for about a week to
10 days if you put them in a brown paper bag.
Recipe:
3 Portobello mushrooms, halved and sliced in small chunks
2 Tbs extra virgin olive oil
1 Tbs lemon juice
1 tsp natural apple cider vinegar
1 clove of garlic minced
1 Tbs of fresh dill (or rosemary)
1 tsp of tamari
1/3 of water or vegetable stock (I use organic mushroom stock)
Fresh ground pepper to taste
In a pyrex, mix the ingredients making sure that all mushrooms
get coated. Then put in the oven and bake at 250 F for
about 30 minutes. Mix once or twice while they are baking.
