There is a smelly, spongy and chewy mushroom that when cooked
gets a rich and woodsy texture (I really love it), and which
has been used as food and medicine in countries like Japan,
Korea and China for thousands of years.
My husband runs in panic when he sees me opening my glass jar
full of these fungus soaked in water.
But it’s okay. That doesn’t stop me from buying them all the
time… By the way, he doesn’t eat them so there are more for me.
Food and medicine meet up in Shiitake mushrooms and to tell
you the truth the smell is not that bad if you use just a few at a
time. So, if you have never tried them… never is too late.

I buy them at Costco or at Asian supermarkets sometimes.
I soak a few in filtered water and change the water three times
during the first day. If the are thick I leave them overnight
and start eating them next day.
Then what I do is to chop them a bit and either sauté them
quickly with garlic and herbs or add them to foods and salads.
Go for them.
This is a wonderful food you can enjoy in so many ways. Let
